By far the largest appellation in the wine-growing region Roussillon that the entire department Pyrenees Orientales includes. The vineyards make up 8,800 hectares of vines in 125 communities. Red wine and rosé must be blended from at least two main varieties and a secondary variety, the main varieties being Carignan Noir ( Mazuelo ) with a maximum of 60%, Grenache Noir ( Garnacha Tinta ), Lladon Pelut ( Garnacha Peluda ) and Cinsaut.
