Light amber, orange to brown. Initially a herbal nose with some bitter notes, typical oxidation character, some caramel and bitter orange jam, gains in depth and complexity with aeration, then has dried fruit aromas, malt, peaty notes reminiscent of single malt whisky. Firm on the palate, very dry with challenging bitter herbal and spicy notes, liquorice, noticeable acidity, also prominent barrel notes, slightly chunky, good finish, but slightly astringent. Palate does not quite fulfil the promise of the nose.
Spanish DO area for the sherry variety Manzanilla; see under Sherry.
