White wines undergo a more or less long aging period after fermentation in steel tanks with repeated stirring if necessary. Depending on the ripeness of the grapes, the red wines undergo more or less long mash extraction. The classically developed varieties then mature for around a year in large wooden barrels or for top wines over a year in French barriques. The premium wines include several (Grüner Veltliner), Chardonnay Triftberg, primary rock Riesling Triftberg and the red wine cuvée "Hangenstein", which has been aged in barriques. When the weather is good, sweet wines such as dried berries and ice wines are also produced. Bottle-fermented sect are also produced.
