The full name "Szent Tamás Szőlőbirtok és Pincészet" is located in the municipality of Mád in the Tokaj-Hegyalja region ( Hungary ). It was founded in 2009 by a group of owners. István is responsible for the operation Szepsy jr. and István Balassa. The vineyards cover 25 hectares of vines in their own possession in the locations of Betsek, Birsalmás, Király, Nyulásszó, Percze and the eponymous Szent Tamás on volcanic soil with yellow and red clay. In addition, grapes are bought in large quantities, which serve for the quality class "local wines". In this regard, an expansion to up to 300 hectares of vineyards by contract winemakers is planned. The varieties Furmint, Hárslevelű and Muskotály (Muscat Blanc) are grown and processed.

The grapes with different yields, depending on the type of wine, are reduced by appropriate measures physiological maturity hand-picked in small boxes, debracked and pneumatically pressed. The fermentation takes place in principle spontaneous me wild yeasts in steel tanks with subsequent flotation, There is no biological acid degradation. The various local wines with the brand name "Mád" are aged in steel tanks. The vineyard wines come exclusively from the vineyard's own vineyards and mature in 500-liter wooden barrels made from Hungarian oak. The premium wines include "Szent Tamás Furmint" and "Percze Furmint", both of which have been in wooden barrels for six months ripen and after another month in steel tanks and final filtration be filled, as well as a "6 Puttonyos Tokaj Aszú ". Various fine brandies are also produced.
