The winery is located in the municipality of Kolitzheim-Zeilitzheim between Volkach on the Mainschleife and the Steigerwald, in the German wine-growing region of
Franconia. It was founded in 2012 by Christian Werr (viticulture and enology studies at
Geisenheim), Heiko Niedermeyer (wine business management at Heilbronn University), and Alexander von Halem (hotelier and owner of the baroque castle of Zeilitzheim, where the winery is located).
The vineyards cover two hectares in the single vineyard Eselsberg (Stammheim), which are planted with the white wine varieties Silvaner and Riesling as well as the red wine variety Domina. The vineyards are cultivated close to nature by
cover crop with a large variety of plants in order to promote
beneficial insects and natural
fertilisation, and no
herbicides are used.
The product range includes the varietal wines Silvaner, Riesling and Domina; the cuvées named after the builder of Zeilitzheim Castle (Philipp Gaston Wolf von Wolfsthal) "Wolf jr (white wine) and the barrique-aged "Fuchs v. B." (red wine), the barrique-aged white wine "Baron" (Silvaner), the
Rotling "Melusine", and the sparkling wine "Petrini" named after the architect of the castle
