, The ancestors of the family come from Switzerland. After a generation in Alsace, Philipp Bär settled in Ungstein in 1590 (the "h" only became known at the beginning of the 19th century). Until 1907, the wines were sold mainly as cask wine to the trade. Until 1973, the grapes were delivered to the local winegrowers' cooperative, in which Helmut Bähr from 1968 to 1972 was also the first chairman. His son Günter built the harvest for the first time with the 1973 vintage. Today three generations work in the family business. In the 17th generation, Jürgen Bähr is mainly responsible for his training as a viticulture technician in 2004. Depending on the vintage, up to 56 different wines are developed, around 20 of which are only available in a relatively small amount between 800 and 2,000 bottles. The grapes are processed gently. The white must is fermented by refrigeration, so that as many fermentation aromas are formed and preserved. The red wines are vinified in special mash fermentation tanks temperature controlled and expanded depending on the grape variety in stainless steel tanks, wooden barrels or barrels. The maturity of the wines is decisive for the bottle filling and so it happens that sold-out wines are replaced only half a year later by the following vintage. With the year 2000 the line "JB" was introduced. These are wines from strong profit-reduced plants, which are developed by Jürgen Bähr according to their own ideas. Bottle-fermented sects are also created. About 95% of the average annual production of 180,000 liters of wine is delivered to end users (with a good 2,000 regular customers).
