The winery is located in the community Hattenheim in the German wine-growing region Rheingau, In 1870 Balthasar Ress founded a business enterprise with restaurant and own viticulture in Hattenheim (today part of Eltville ). In 1993, the new wine cellar building "Rheinallee 50" was acquired. The old manor house in the "Rheinallee 7" today offers an impressive setting for events of all kinds. The vinotheque is located in the new cellar building. Today, the traditional company is run in the fifth generation by Christian Ress, who completely rebuilt the estate together with Dirk Würtz. The vineyards cover 43 hectares of vineyards in the individual layers Mount Roseneck. Mountain Rottland and Mountain Schlossberg (Rudesheim) Engelmann mountain. Nussbrunnen and Schützenhaus (Hattenheim), as well Höllenberg (Assmannshausen). They are predominantly with the Riesling (40 ha), as well as Pinot Noir ( Pinot Noir ) and other varieties.

The wines are made in three lines according to the VDP classification model marketed. Even Balthasar Ress used to offer especially selected wines as "Von Unserm". Since the 2013 vintage, the first Schleswig-Holstein Landwein produced from Sylt, which is designated after the latitude "55 ° North - Solaris / Rivaner".
