The winery is located in the municipality of Hallgarten (Oestrich-Winkel) in the German wine-growing region of Rheingau. The winery was founded in 2013 by Walter Bibo (long-time director of Schloss Reinhartshausen) and Kai Runge. Since 2017, the winery has been run jointly by Walter Bibo (farm manager), as well as Markus Bonsels (oenologist and sales) and his wife Monika Eichner (marketing, administration). Bonsels, a former manager, left his job in 2015 to study viticulture and cellar management in Germany and France. Kai Runge has left the business. Bonsels & Bibo KG acts as the owner.
The vineyards cover 4.5 hectares of vines (4 hectares leased and 0.5 hectares owned) in the single vineyards Hendelberg, Jungfer, Schönhell (with KL Frühernberg) and Würzgarten (Hallgarten) as well as Lenchen (Oestrich). The grape varieties Riesling and Pinot Noir are cultivated. Only physiologically ripe grapes are processed through selective manual harvesting. According to the company's philosophy, "the wines are given time". This includes long maceration times of up to 48 hours, gentle pressing by means of a French basket press, subsequent spontaneous fermentation in wooden barrels and 10 to 15 months of maturation. The three quality levels are Rheingau Riesling (18 hours of maceration, fermentation in a double piece, 10 months of maturation), HARGARDUN and ROMANTIKER (30 hours, piece, 12 months) and REVOLUZZER (48 hours, half piece, 15 months). These processes produce varietal, aromatic wines. Bottle-fermented Riesling sparkling wine is also produced. The winery is a member of the well-known international Slow Food association.
