He was the first one in Switzerland Crémant after the champagne method pressed and with Barrique experimented. The then cellar master of Domaine de la Romanée-Conti André Noblet gave his friend Thomas three used ones in 1973 La Tche Barrels, in which the first "Herrschäftler" after the classic Burgundy method was expanded. These include greening, purely biological fertilization, ecological plant protection with reduced use of fungicides as well as waiver herbicides and insecticides,

The operating motto is: Good wines can be made in the cellar, while large wines grow in the vineyard . The basement rooms are divided into a barrique cellar and seven centuries-old vaulted cellars. The grapes of the different layers are developed separately according to the location. The white wines are in fermented and afterwards in the expanded. The red wines ripen in Burgundian pièce -Fässern. The classic Blauburgunder called "Tradition" in used, the Pinot Noir from the more than 1000-year Malanser top layer "Spiger" to one third in new and vinified from the best grapes "Unique" in exclusively new barrels. As an example serve the Grand Crus from Burgundy. Almost 80% of the production goes to renowned Swiss restaurants and hotels, from whose chefs the wines are picked up personally at the winery.
