The "Weingut & Edelobstbrennerei Fischer" is located in the community Wiesentheid (Steigerwald area) in the German wine-growing region Franconia
, It was founded in 1948 as a "wine shop Fischer" by Martin Fischer. In 1964, the restaurant "Zur Krone" was acquired as a new headquarters. The first vineyard was bought in 1979 and the winery Fischer was founded. In 1990 Joachim Fischer took over the business from his father. After completing his internships in German and European wineries, son Thomas completed his training as a state-certified wine technologists
, After further practice in Australian and New Zealand wineries he is responsible since 2010 for the entire construction and expansion of the wines. Since 2014, the Weinstube joins a newly built wine shop, which forms a harmonious unit with the old Gutshaus.
The vineyards cover nearly nine hectares of vineyards in the individual layers devil (Kammerforst), Stollberg (Handthal), Wutschenberg (Kleinlangheim), Herrenberg (Oberschwarzach) and Wachhügel (Wiesenbronn). They are planted with the white varieties Silvaner, Müller-Thurgau, Bacchus, Scheurebe, Riesling, Pinot Gris, Pinot Blanc, Sauvignon Blanc and Gewürztraminer, and with the red varieties Pinot Noir, Domina, Portuguese, Dornfelder, Schwarzriesling and Regent.

The in-house quality pyramid includes at the top the "3-star wines" of selected Rebparzellen with significant yield reduction, hand-picked grapes and careful aging in barrique barrel. Then follow the "Great & Noble sweet francs", these are Franconian top wines with targeted yield limit of selective hand-picked. This is followed by the three stages "Classical Franks" with layered wines, the "Fischers Fritz" line with young, sparkling varietal wines and the basic line "Ortsweine" in liter bottles. Every year around 170,000 bottles of wine are produced.
The second pillar of the business is its own Edelobstbrennerei. It produces a wide range of fine spirits (eg blackthorn, Williams, raspberry, rowanberry, wild cherry, hazelnut), as well as liqueurs. After the firing process, the distillates are stored and matured in large clay pots or small wooden barrels until ready for drinking. The company is a member of the Edelobstbrennereivereinigung Rosenhut, which guarantees a production according to strict quality guidelines without sugar.
