The estate is located in the commune of Escherndorf (Maindreieck area) in the German wine-growing region Franconia, The Schäffer family, steeped in tradition, has been documented here since 1524. From 1900, Jakob and Ottmar Schäffer ran the winery / winery Gebr. Schäffer. In 1988 it was taken over by Egon Schäffer, who is now supported by son Peter. An apartment is connected. The vineyards cover 3.5 hectares of vineyards in the individual layers Sonnenberg (Untereisenheim), as well Furstenberg and bounder (Escherndorf). Around 70% of these are steep slopes. The white wine varieties Silvaner, Müller-Thurgau, Pinot Blanc, Riesling and Bacchus, as well as the red wine variety Schwarzriesling are planted, but as Rose is expanded.

The winery feels that noninvasive Principle obliges "that quality grows in the vineyard". By selective hand picking only ripe and healthy grapes are processed. The basement work is carried out in a gentle manner. On practices such as adding aromatic yeasts or Süßreserve, such as enrichment and deacidification is deliberately avoided. The wines are fermented with long contact on the expanded and mature in the cellar before marketing. The winery's own name "Schäffer dry" means one residual sugar less than 2 g / l. Fine brandies and wine vinegar are also produced. For rarity samples, exceptional vintages may be tasted twice a year. The winery is a member of the VDP and at Slow food,
