(Top ten cellars), since 1796 it is family owned. Today it is run by Eva and Ralf Bonnet in the seventh generation of the family, supported by senior citizens Volker and Gerda Bonnet. The vineyards cover 14 hectares of vineyards in the individual layers Römerbrunnen and Schlossberg (Hambach). They are planted with the white varieties Riesling (35% of the area), Silvaner, Kerner, Scheurebe, Chardonnay, Pinot Blanc, Pinot Gris, Rieslaner and Gewürztraminer, and with the red varieties Pinot Noir, Domina, Cabernet Sauvignon, Merlot and Dornfelder. Furthermore, grapes from friendly winegrowers from selected locations are purchased.
Depending on the type of wine, the fermentation takes place in stainless steel, in large wooden barrels or in barriques for 9 to 24 months with possibly longer yeast storage of the young wines. It also produces bottle-fermented sect. Since the 2008 vintage, the wines of the closely related winery "Alfred Bonnet" from Friedelsheim are also vinified in the Hambach Winery.
