The estate is located in the commune of Kleinbottwar (Württembergisch Unterland district) in the German wine-growing region Wuerttemberg, The viticulture at Schaubeck Castle was documented for the first time over 700 years ago in 1297. In 1914 the Graf Adelmann family inherited the castle. In the fifth generation of the family, Felix Graf Adelmann has been in charge of the estate since the year 2102. Other agricultural land also belongs to the property, but has been leased since 1990. The wines are not aged in the castle itself, but in the "Amtskeller" in the municipality of Kleinbottwar, a few hundred meters away from the castle, which is around 500 years old. The partly steeply terraced vineyards cover 21 hectares of vineyards in the municipalities of Kleinbottwar (16 ha), Grossbottwar (1 ha) and Hoheneck (3 ha of terraces). The according VDP classification two single layers of Kleinbottwarer defined large layers Upper mountain and Süßmund are privately owned. The extensive range of grape varieties includes the red wine varieties Lemberger ( ) Samtrot, Pinot Noir ( Pinot Noir ) Frühburgunder, Trollinger ( Schiava Grossa ) Muskat-Trollinger. Cabernet Cubin. Cabernet Mitos. Dornfelder and Blue Urban ( Schiava Gentile ), as well as the white wine varieties Riesling, Pinot Gris ( Pinot gris ), Pinot Blanc ( Pinot Blanc ) muscatel and Traminer,

Whole grapes are mainly pressed for white wines. These are fermented cold to emphasize the aromas. The red wines are made according to the classic maceration aged in wooden barrels. The dry good wines bear the brand name "Brussels", noble sweet wines (ice wine, TBA, etc.) "Brussels tip". This premium line was introduced in 1945 as the first German premium wine. The name goes back to the barons of Brusselle-Schaubeck, who resided here from 1853 to the early 20th century. Other wines are for example. "The Loewe von Schaubeck" (in white and red), the cuvée "Herbst im Park" (Lemberger, Pinot Noir, Cabernet varieties) and as Big plant "The Black Lion" (Lemberger) and "The Song of the Earth" (Riesling). A Lviv was served at a gala dinner in honor of US President Ronald Reagan (1911-2004), to which Federal President Richard von Weizsäcker (1920-2015) had invited.
