The estate is located in the Burg Layen municipality in the German wine-growing region Near, The management was handed over in 2002 by Johann Baptist Schäfer to his son Sebastian in the fourth generation of the family. He had been responsible for the vinification since 1997. The vineyards cover 6.3 hectares in the vineyards Schlossberg (Layen Castle), as well Goldloch and Pittermännchen (Dorsheim). More than 50% of them are planted with Riesling, Pinot Noir, Pinot Blanc, Pinot Gris and Scheurebe. When it comes to winemaking, the primary goal is to produce terroir-emphasized wines. There is a selective hand picking and gentle further processing. Every wine goes through an individual process in order to be able to fully develop its very special natural character. For this reason, the questions of fermentation with natural or pure yeast, processing in steel tanks or wooden barrels and the duration of the yeast storage are decided on a case-by-case basis. The winemaker says "in a way in consultation with the grape must". Noble sweet quality wines are also produced.
