The winery is located in the municipality of Sinzheim-Ebenung (Ortenau area) in the German wine-growing region of Baden. In 1996, Ewald Kopp began marketing the wines himself. After internships at the wineries Dr Bürklin-Wolf(Pfalz, Germany) and Bleasdale (Langhorne Creek, Australia), it was taken over by son Johannes in 2012 and run with his wife Birgit. The vineyards cover 25 hectares of vineyards in the single vineyard sites Klostergut Fremersberger Feigenwäldchen (Sinzheim), Klosterbergfelsen with the Gewann Sommerhalde, Steingrübler with the Gewann Röderswald, and Sonnenberg with the Gewann Am Altenberg (Varnhalt). They are planted with the white wine varieties Riesling, Chardonnay, Pinot Blanc, Pinot Gris, Gewürztraminer, Muskat-Ottonel, Scheurebe, Sauvignon Blanc, Muskateller and the red wine variety Pinot Noir. Yields are consistently regulated in order to increase quality.

The physiologically ripe grapes, harvested in a selective hand harvest, are processed gently. The quality pyramid consists of three lines: estate wines, terroir wines and site wines. The estate wines, with yields reduced to 80 to 90 kg/acre, are predominantly vinified in stainless steel tanks in a manner typical of the variety. The terroir wines, with a yield reduced to 60 kg/acre, are matured in stainless steel tanks, in large wooden bar rels (especially the cuvées) or in barriques. For the top line site wines, grapes with a yield reduced to 30 to 40 kg/Ar are used. The red wines mature for at least 24 months, the white wines for 12 months in barrique. The best Rieslings from the Feigenwäldchen Terrassen site are fermented spontaneously and mature in wooden barrels for one year. The Feigenwäldchen wines are marketed with a special, traditional label. Bottle-fermented sparkling wines and noble brandies (pear, cherry, plum) are also produced. The winery is a member of the Generation Riesling association.
