The estate is located in the municipality of Kaltern in the Überetsch (Bozen province) in the Italian wine-growing region South-Tirol (Region Trentino-Alto Adige ). The historical buildings of the winery date back to 1608. It was built by Hieronymus Manincor, who gave Emperor Matthias (1557-1619) the land on Lake Kaltern for his services to Austria and at the same time elevated him to the nobility. The family crest "Man-in-cor" means "hand on heart". In 1978 the estate became the property of the Counts Enzenberg and has been owned by Michael Graf Goëss-Enzenberg since 1991. At that time the company was a sought-after grape producer without its own vinification, which delivered the harvests to the cooperatives in Kaltern and Terlan. After an increase in quality through limited yields and the introduction of near-natural management, production began in 1996 in our own cellar facilities. In 2004 a newly built basement was opened, which is considered an international example of contemporary basement architecture. Responsible director and oenologist is Helmuth Zozin. The entire property covers 300 hectares with fruit, wine, forest and meadows.

The vineyards cover 50 hectares of vineyards with mostly cru locations in Terlano and Caldaro. 60% of them are planted with the red varieties Blauburgunder, Merlot, Cabernet Franc, Cabernet Sauvignon, Petit Verdot, Tempranillo, Syrah, Lagrein and Vernatsch, and 40% with the white varieties Sauvignon Blanc, Goldmuskateller. In the cellar, processing takes place according to the so-called gravity flow principle, i.e. pumpless operation with the use of gravity over three floors and thus low pollution of grapes, must and wine at the winemaking, The fermentation, expansion and processing of the wines take place with a minimum of intervention. The majority of the wines, around 2/3 for white wine and 100% for red wine spontaneous fermented, triggered by the natural yeasts from the vineyard. Pure breeding yeasts are only added in exceptional cases.

The wines are produced in the three lines Hand (Basis), Herz (from "Große Lagen") and Krone (extreme selection from the best vineyards only in special vintages). Each vineyard is developed separately with a strict location philosophy. The best are bottled as "heart wines" (individual layers). The wines are aged 100% in wooden barrels. Much of it is made from wood from our own oak forest. The premium wines include the white wine Tannenberg (Sauvignon Blanc) matured in large wooden barrels for 9 months, the red wine cuvée Cassiano (Merlot, Cabernet Franc, others) aged for 18 months in barrels and the red wine Mason di Mason (Pinot Noir) aged for 12 months , Around 300,000 bottles of wine are produced annually. The winery is a member of the associations Free wine growers in South Tyrol and respect.
