The estate is located in the municipality of Freyburg-Zscheiplitz in the German wine-growing region Saale-Unstrut
, It was founded in 1990 by Irene and Herbert Pawis with only 0.5 hectares of vineyards. Son Bernard Pawis took over the business in 1998 and laid the foundation for expansion with a newly built modern winery. In 2007, the relocation of Freyburg in the elaborately renovated historic monastery in the district Zscheiplitz. A bunch of wine is connected. Events organized by the winery enrich the cultural life of the region. Furthermore, young club concepts such as "wine rocks", guided tours in the monastery courtyard and the collection of donations for the preservation of the monastery are supported. As a recognized training company young people are offered the opportunity for internships and further education. Worth mentioning is the principle of sustainability
in production and operation using solar energy to generate electricity, collecting rainwater for irrigation, and using combined heat and power for heating and power generation.
The vineyards now cover 13 hectares of vineyards in some steeply terraced and owned by the winery's elaborately renovated areas. There are ongoing conservation measures on the historic vineyard walls. The vineyards are located in the individual layers Edelacker
and Mühlberg (Freyburg), as well as Sonneck
(Naumburg). They are planted with the white varieties Riesling, Pinot Blanc, Pinot Gris, Müller-Thurgau, Sylvaner, Bacchus and Kerner, as well as with the red varieties Dornfelder, Portuguese, Pinot Noir and Regent. It is consistently close to nature, environmentally friendly viticulture with needs fertilization

The wines are brimmed with fermentation and individual maturation with typical regional flavor potential of the individual grape varieties predominantly dry and fruity
expanded. Special red and white wines mature in local oak barrels of Triassic oak. Since the year 2001, the Riesling and Burgundy from the Freyburger Edelacker as Big greenhouse
produced and marketed. In weather-appropriate years are also Eiswein
vinified. It also produces brandies (pomace, yeast) and flaschenvergorene sect. The wines are distributed nationwide to end consumers, restaurants and retail customers. The winery has been a member since 2001 VDP
(Verband deutscher Prädikatsweingüter).
