The estate is located in the municipality of Freyburg-Zscheiplitz in the German wine-growing region Saale-Unstrut, It was founded in 1990 by Irene and Herbert Pawis with only 0.5 hectares of vineyards. Son Bernard Pawis took over the business in 1998 and laid the foundation for expansion with a newly built modern winery. In 2007 Freyburg moved to the lavishly renovated historical monastery estate in the Zscheiplitz district. An ostrich economy is connected. Events organized by the winery enrich the cultural life of the region. Young club concepts such as “wine rocks”, guided tours in the monastery courtyard and the collection of donations for the maintenance of the monastery complex are also supported. As a recognized training company, young people are offered the opportunity for internships and further training. The principle of sustainability in production and operation using solar energy to generate electricity, collecting rainwater for irrigation, and using cogeneration for heating and power generation.

Today, the vineyards cover 13 hectares of vineyards in partially steeply terraced areas that are owned by the winery and are extensively renovated. The vineyards are located in the individual layers Edelacker and Mühlberg (Freyburg), as well Sonneck (Naumburg). They are planted with the white varieties Riesling, Pinot Blanc, Pinot Gris, Müller-Thurgau, Silvaner, Bacchus and Kerner, as well as with the red varieties Dornfelder, Portuguese, Pinot Noir and Regent. It is consistently natural, environmentally friendly viticulture with needs-based fertilization according to the result of regular soil analyzes, greening and the use of beneficial plant protection products.

The wines are mostly dry and with restrained fermentation and individual maturation with typical flavor potential of the individual grape varieties fruity expanded. Special red and white wines mature in oak barrels made from regional Triassic oak. Since the 2001 vintage, the Rieslings and Burgundies from the Freyburger Edelacker are known as Big plant produced and marketed. In weather-appropriate years too Eiswein vinified. Fine brandies (pomace, yeast) and bottle-fermented sparkling wines are also produced. The wines are sold nationwide to end consumers, restaurants and specialist retail customers. The winery has been a member of the VDP (Association of German quality wine estates).
