The "Selbach-Oster" winery is located in the commune of Zeltingen in the German wine-growing region Moselle (Mittelmosel). The family can look back on over 400 years of winemaking tradition. The Selbachs, originating from Ürzig, have been winegrowing since 1600, the Osters were cooper from Zeltingen. The great-grandfather of today's owner Johannes owned a steamship, with which barrels were transported across the Moselle and Rhine to the North Sea ports. The barrels were made by the cooper Matthias Oster (paternal great-grandfather). In 1963, the family-owned vineyards of the two families were taken out of the traditional "Kellerei J & H Selbach" old style and combined as an independent business. Since then there have been two companies, "J & H Selbach" (winery) and "Selbach-Oster" (winery).

The mostly south-facing, steep vineyards cover 21 hectares of vineyards in individual layers sundial, Schlossberg and Heaven (Zeltingen) Domprobst (Graach) and sundial (Wehlen). The best individual parcels are Rotlay (Zeltinger Sonnenuhr), Schmitt (Zeltinger Schlossberg) and Anrecht (Zeltinger Himmelreich). 97.5% Riesling and 2.5% Pinot Blanc are grown. Many areas are with ungrafted, e.g. Some vines over 100 years old are planted with aromatic, small berries.

Less steep three hectares of vineyards are cultivated according to the guidelines of the Organic viticulture, the rest according to the principles of Integrated crop protection (KIP) managed. Reduced yields are a high-quality criterion. Through selective hand picking in several courses, only ripe and healthy grapes are processed. The fermentation takes place predominantly spontaneous with vineyard-owned wild yeasts. Half of the wines are aged in wooden fins without a wood note, the other in stainless steel tanks. The premium wines of the house include the single-layer wines. In weather-appropriate years there will also be a Eiswein generated.

The "J & H Selbach" winery purchases carefully selected must and young wine from individual locations by small producers, with whom business relationships have often existed for several generations. Together with selected high-quality wines from the region, they are marketed in Europe and overseas. Both companies are managed by Johannes Selbach and his wife Barbara.
