The winery is located in the municipality of Randersacker (Maindreieck area) in the German wine-growing region of
Franconia. It came into being when the two brothers Paul Schmitt (House of Dry Wines) and Bruno Schmitt (Robert Schmitt Winery) merged their businesses in 2002. The wine house "Ewig Leben" and a guest house are attached. The vineyards cover 15 hectares of vineyards in the Randersacker single vineyard sites Lämmerberg,
Marsberg,
Pfülben and
Sonnenstuhl. They are planted with the white wine varieties Silvaner, Müller-Thurgau, Riesling, Rieslaner, Traminer, Scheurebe, Weißburgunder and Bacchus. Natural, environmentally friendly viticulture is consistently practised
Robert Schmitt (Bruno Schmitt's uncle) was considered the guardian of the grail of uncompromisingly dry Franconian wines vinified in classic wooden barrels. The original name of the winery derives from the philosophy of "naturally pure wines", which has always been valid (in both wineries). This means that a wine is never enriched with sugar, is always allowed to to ferment fully and is bottled without the addition of sweetness. Fermentation and maturation take place in steel tanks and in large wooden barrels. According to the old Franconian rule, wines are only labelled as dry
(fränkisch trocken) up to 4 g/l residual sugar, even though this is permitted by wine law up to 9 g/l. Rarely is more than 1 g/l residual sugar achieved. Bottle-fermented sparkling wine and grape marc brandy are also produced. The winery is a member of the Silvanerforum and
