The estate is located in the commune of Heitersheim (Markgräflerland region) in the German wine-growing region to bathe, It was founded around 1844 by Wilhelm I, great-great-grandfather of the present owner Fabian Zähringer. After an interim sale Martini & Rossi Wolfgang Zähringer returned to the company in 1986. He performed extensive quality measures and started with what was seldom practiced at the time Organic viticulture, Fabian Zähringer, the sixth generation, has been active in the winery since 2010. In 2010 he founded the "Zähringer Zurich" wine house in his second home in Zurich. In addition to the Zähringer wines from Heitersheim there are also Organic wines sold from other growing areas.

The vineyards cover 15 hectares of vineyards in individual locations Maltesergarten and Sun Hollow (Heitersheim) Schlossberg (Staufen / Grunern) and Castellberg (Ballrechte-Dottingen). They are planted with the red varieties Pinot Noir, Regent, Cabernet Sauvignon, Cabernet Franc and Merlot, as well as with the white varieties Gutedel, Pinot Blanc, Pinot Gris, Chardonnay, Sauvignon Blanc, Gewürztraminer and Müller-Thurgau. The vineyard is managed according to the certified guidelines of ECOVIN and since 2010 also after the biodynamicDEMETER rules, This includes targeted greening in the vineyard, the use of biodynamic preparations and no chemical-synthetic ones pesticides and fertilizer,

The carefully and selectively read physiologically mature Grapes are pressed slowly, depending on the type of wine, sometimes with whole grapes. The fermentation takes place spontaneous with yeasts from the vineyard. Depending on the type of wine, the wines ferment in a stainless steel tank, in a large wooden barrel, as a specialty of the house in Vierlig (special Markgräfler 600 l barrel) or in barriques. The red wines go through the traditional maceration, The malolactic fermentation is also approved for white wines, depending on the vintage and type of variety.

The wines are in the lines "Vierlig" (extra dry), "Gutsweine" (dry liter bottles and a wide assortment of 0.75 l wines mainly from Maltesergarten and Sonnhohle), as well as without filtration Bottled “Zähringer Löwe” (dry premium wines and noble sweet rarities from strictly selected grapes from the top parcels) are marketed. It also produces organically grown ones sparkling wines and bottle fermented generated. Premium products include Grauburgunder SZ, Pinot Noir SR and Chardonnay Sekt Brut.
