The white wines are always fermented cool and temperature controlled reductively expanded
, The expansion takes place in stainless steel tanks, with the highest quality from Sauvignon Blanc and Chardonnay from fermentation in barriques. After fermentation, red wines generally undergo biological acid degradation and, depending on the quality level, are aged in stainless steel tanks, wooden barrels or (including fermentation) at least 18 months in French and Swabian barriques. The middle segment includes varietal wines of international style that mature in used barriques for at least eight months. The premium wines are marketed under the “Goldadler” line, including the “Triologie” blend (Merlot, Cabernet Sauvignon, Zweigelt). There are also bottle fermented , as well as fine brandies (fruit, berries, herbs, pomace) and liqueurs.
