The estate is located in the municipality Volkach (area Maindreieck) in the German wine-growing region Franconia
, It was founded in 1933 by the grandfather of today's owner Heinrich-Josef Pfaff. As then cellar master of the local cooperative, he started his own business by buying the hotel "Zur Schwane" and started to grow wine on some vineyards. From the 1960s, the operation of Michael Pfaff (son of the founder) was enlarged. Since 1997 he is led by Eva-Pfaff-Düker and Ralph Düker. The name derives from a family Schwan, which operated a tavern on the site of today's hotel at the beginning of the 15th century.
The vineyards cover 15 hectares of vineyards in the individual layers Furstenberg
(Escherndorf), Landsknecht (Obervolkach), (Obereisenheim) councilman
(Volkach) and Zehntgraf (Wipfeld). They are planted with the white varieties Silvaner (50%), Riesling (25%), Müller-Thurgau, Bacchus, Kerner and Rieslaner, and Spätburgunder. Special emphasis is placed on selective grape harvest and completely healthy grapes. The grapes are processed gently. Fermentation is temperature controlled in steel tanks. Beauty and filtration are only done when needed to maintain fruitiness and freshness. The red wine "Fervor Oloris" (passion or ember of the swan) is made from Pinot Noir and aged 15 months in French oak barrels. The filling of the Franconian classics takes place in the Bocksbeutel. Lightly vinified wines are marketed in the Bordeaux bottle. It also produces bottle-fermented sparkling wines and spirits. The winery is a member of VDP
(Verband deutscher Prädikatsweingüter).
