Regional appellation for only red and rosé wines in French Burgundy, The vineyards cover about 430 hectares of vineyards on calcareous soils in the departments of Côte d'Or (91 municipalities), Rhône (85), Sâone-et-Loire (154) and Yonne (54). The so-called wines already have a very old tradition. The approved grape varieties Pinot Noir or the clone Pinot Liébault with at least a third share and Gamay have to grow together on a parcel. They are read and processed together (like Mixed set ). This is also the meaning of Passe-Tout-Grain. The rosé wines must after the Saignée method ( racking after a short maceration) are produced.
