Regional appellation for exclusively red and rose wines in French Burgundy, The vineyards cover around 430 hectares of vine on limestone soils in the Côte d'Or (91 municipalities), Rhône (85), Sâone-et-Loire (154) and Yonne (54). The wines so designated already have a very old tradition. The approved grape varieties Pinot Noir or the clone Pinot Liébault with at least a third share and Gamay must grow together on a parcel. They are read and processed together (like Mixed sentence ). That is the meaning of Passe-Tout-Grain. The rosé wines must be after Saignée method ( racking after a short maceration).
