Subappellation named after the community Côtes du Roussillon-Villages in the southern French region Roussillon. The full name is Côtes du Roussillon-Villages Caramany . As a special rule, red wine must contain at least 60% of the grapes, but the total amount of Carignan (which may not exceed 60%) Macération carbonique Be fermented (carbonic acid mixture). The reason for this peculiar regulation is that the local cooperative Caramany was the first producer in France to use this technique in 1964.
